Merrychef® applies to speed, flexibility and quality to Hyatt Place brand

Hyatt Place, the newest hotel brand of Global Hyatt Corporation, implemented a six-point brand strategy to maximize its foodservice goals of limiting labor, minimizing kitchen footprint, streamlining food delivery to enable 24/7 service, locking in a higher level of food safety and less handling by cooks, conserving energy through technologically advanced equipment, and limiting raw material waste.

Each kitchen is strategically designed to encompass only 900 square feet (the size of one hotel room), 5 kitchen staff and 3 core pieces of equipment to prepare hot meals 24/7. For each of its new properties, Hyatt Place selected the advanced accelerated cooking technology of the Merrychef 402S to produce quality meals quickly in a limited space. Hyatt Place also expanded the flexibility of their new kitchen concept by allowing an additional Merrychef 402S to be used in the lobby kitchen area for off-hours production. As a result a larger meeting room menu was able to be created for small groups staying at the hotel, keeping additional revenue in the hotel.

A combination of convection heat, impingement pressure and up to 1500 watts of microwave power allows the 402S to cook 10 to 15 times faster than conventional convection ovens with typical cook times of 15 seconds to one minute 30 seconds. A built-in catalytic converter eliminates the need for a ventilation hood so the oven can operate in virtually any environment.

"It all adds up to balancing high-end results with low upfront costs and continuing expenses", says Michael Koffler, vice president of corporate operations at Hyatt. "So far, guest feedback has been phenomenal. We're exceeding our wildest expectations on the number of returning guests."
